Malai Kofta


Ingredients:
For the Koftas :
100 g, cheese
5 potatoes, baked and smashed.
1 onion, chopped
1 tbsp green peas
½ tbsp raisins
5 green chillies, finely chopped
1 inch ginger, crushed
½ tbsp coriander leaves, chopped
2 tsp fresh limejuice
½ tsp red chilli powder
Salt to taste

For Gravy :
125 g skim cream
50g cheese
100 g skim milk
1 onion, chopped
1 inch ginger, crushed
2 to 3 cloves garlic, crushed
½ tbsp coriander leaves, chopped
½ cup skim yogurt

Spices :
1 tsp red chilli powder
1 tsp garam masala
1 tsp coriander powder
1 tsp turmeric powder
½ tsp cumin seeds
2 remove shell cardamom pods
1 tbsp canola oil
salt to taste

For Garnishing :
1 tbsp grated reduced fat paneer
½ tbsp coriander leaves, chopped
½ tbsp skim cream

Method :
For the Koftas :
Combine together all the ingredients except raisins.
Make koftas putting 2 to 3 raisins in the centre.
Put the koftas in an oven, preheated to a temperature of 150ยบ C for 3 to 5 minutes.

For the Gravy :
In a bowl, take yogurt and mix well all the spices and keep aside.
Combine the remaining gravy ingredients except coriander leaves in a grinder and grind to a paste.
Heat a nonsticking skillet and add oil.
When the oil becomes hot, put yogurt-spices mixture and fry on medium heat with stirring till a mesh type texture results and the oil separates out, about 5 minutes.
Add the paste and fry for 5 to 7 minutes and stir properly.
Add 1½ cups water and allow it to boil for 10 minutes.
Combine chopped coriander leaves.
Keep the koftas in a bowl and pour gravy over them.

"Pakistan must guard against Yuvraj"


Dhoni’s captaincy has been smart. He has kept teams guessing with his team selection, writes Wasim Akram.
Nobody could have asked for a better ICC Cricket World Cup semifinal than India versus Pakistan . It is the mother of all battles and the world will be watching every ball of it. I have been reading quite a few opinions by former players, saying India will be the favourites, but in matches where mental preparedness and the ability to soak pressure transcend cricketing skills, I would not like to stick my neck out.

Having said that, India will be the team under pressure, not Pakistan. The media in India is big and strong. The pressure created by them is simply mind-boggling and then there are a billion people with massive expectations. The fact that Pakistan are playing away from home is an advantage. Given the high security at Mohali, the Pak team has been largely confined to its practice sessions and the hotel. Hence, there will be no dearth of focus.

India will be on a high after beating Australia and Pakistan would do well to forget the cakewalk against the West Indies . The dismal Caribbean performance took the importance out of a World Cup quarterfinal. Well, a win is always good and if it comes convincingly, nothing like it.

Beating Australia was no mean job. India rode on some stunning performances and I think Yuvraj Singh was outstanding. Before the World Cup started, almost every one said Yuvraj was over and out, but I always said he was one good innings away from striking a purple match.

The left-hander has shown great attitude. He is eager to play long knocks and he has converted good starts to fifties and a century. Yuvraj has understood the virtue of being consistent and trust me, he is only going to get better. Unfortunately, that is not good news for Pakistan . Shahid Afridi and team will have to bowl intelligently to him. They will have to stop his run-flow and that's the only way I think Yuvraj can be reined in.

If Yuvraj has been brilliant, MS Dhoni's captaincy has been judicious and smart. I admire his horses-for-courses methods and the decision to leave out Yusuf Pathan and retain Suresh Raina was a great move. It is never easy to drop a match-winner like Pathan but Raina's partnership with Yuvraj proved to be decisive against the Aussies. Now, you don't know whether he will play Raina or Pathan in the next match. So, Dhoni has created doubt in the mind of the opposition think-tank. He is keeping everybody guessing. That's smart indeed!

I think the Indian bowlers are doing pretty well. Restricting Australia to 260 was no mean task. Zaheer, Ashwin everybody are doing their jobs and the attack has a lot of variety. Zaheer has been bowling well for the last two years but in this World Cup, he has been unplayable at times. His length is perfect, he is coming around the wicket and bowling well. For a left-hander to come around the wicket means Zaheer has got a lot of confidence.

As we approach D-Day, I sincerely urge fans of both India and Pakistan to enjoy the moment. This is the first time India and Pakistan are meeting in a World Cup semifinal. The stakes are high but we must keep our emotions in check.

Power Star gets support from Siddharth


Before the release of Pawan Kalyan's 'Puli', the hype was so excessive. The batch of young heroes like Rana, Nitin and others lifted Power Star's pride to sky high. But result was a complete dud which did not have any face saving elements at least to call the film a mere average.

Now, same seems to be happening for 'Teen Maar'. Flop Star Siddharth normally known for strong support to Jr NTR and Nandamuri heroes shifted the loyalties tweeting, "saw the promo of 'teen maar'. Power star at his rocking best! My dear friend jayant seems to have a winner on his hands:)." Hype for any Pawan Kalyan movie is expected. Unlike general public and fans, these young heroes are also helping their best to raise expectations and kill the movies. What remains to be seen is how Nandamuri fans will react to this flop star's support to power star because Siddharth could have praised 'Shakti' and not 'Teen Maar'.

Beer with kicking Cricket World Cup

Cricket is the common religion of Indians. We might have any disparities in opinions and living standards but everyone gets united for one cause of Cricket. With World Cup 2011 bringing the arch rivals India and Pakistan face to face in semis, cricket fever is back at its peak. Cricket fans in nook and corner of India show passion for their loved teams but worrisome point is youth are drinking alcoholic beverages excessively during these matches.

Youth in metros and cities in between 16 and 20 years of age raised their drinking potential by 100% from two beers to four beers during day night matches, says a survey by commerce chamber, while those between 21 to 25 years increased their capacity to seven beers and the sales of whisky, vodka, rum and wine raised by 25%.

In Hyderabad, we are to witness a special screening of India Vs Pakistan match on 30th at GMC Balayogi Stadium with a crowd of 30,000 and interestingly we are served with liquor even here too. So beer and cricket turns to be a kicking combination.

Spicy Pani Puri

Ingredients:

To make puri
  • 1 cup Semolina (Rava / Suji)
  • 3 tblsp Fine Wheat Flour (Maida)
  • 1/4 tsp Baking Soda
  • Oil to deep fry
To make pani
  • 1/2 cup Tamarind Pulp
  • 2 cups Water
  • 2 tblsp roasted Cumin Seed (Jeera) Powder
  • 2 tblsp un-roasted Cumin Seed (Jeera)
  • Coriander Leaves
  • 3 Green Chilly
  • 2 tblsp Mint Leaves (Pudina Leaves) Chutney
  • 1 tblsp Black Salt
  • 2 tblsp Jaggary 
Preparation:
To make pani
  • Measure all ingredients.
  • Adjust spices and tangyness to taste.
  • Strain through a wire strainer to remove any rough bits
To make puri
  • Mix sooji, maida, baking soda, salt and enough water to knead a soft dough.
  • Stand covered with wet cloth for 15-20 minutes.
  • Make small sized balls.
  • With the help of some dry maida or sooji, roll into thin rounds.
  • Heat oil in a pan and deep fry puri's till very light brown and crisp.
  • Drain in a paper towel for a while to dry out the oil.
  • Store in an airtight container when cool.
